Ingredients

  • 400 g spaghetti
  • 500 g beef mince
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 tablespoons tomato purée
  • 400 g tinned peeled tomatoes
  • 150 ml red wine
  • 150 ml beef stock
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese, to taste

Preparation

  1. Heat the bakeVIA hob to medium heat and add the olive oil to a large, heavy-based pan. Sauté the onion, garlic, carrots and celery for around 8 minutes until soft and lightly golden, stirring regularly to prevent anything from sticking.
  2. Turn the heat on the bakeVIA hob slightly higher and add the beef mince to the pan. Cook the mince, stirring continuously, for about 5 minutes until crumbled and browned, making sure no pink pieces remain.
  3. Stir the tomato purée into the meat mixture and cook for 2 minutes over medium heat to allow it to caramelise and lose its raw flavour. Then add the red wine and let it reduce for 3 minutes until the alcohol has evaporated.
  4. Add the peeled tomatoes, beef stock, oregano and thyme to the pan on the bakeVIA hob. Bring everything to the boil, then reduce the heat so the sauce simmers gently. Leave the bolognese sauce to simmer uncovered for at least 25 minutes, stirring occasionally, until it has thickened into a rich, full-bodied ragù. Season to taste with salt and pepper.
  5. In a separate large pan, bring plenty of well-salted water to the boil on the bakeVIA hob over high heat. Cook the spaghetti according to the packet instructions, drain and reserve a splash of pasta water. Toss the spaghetti through the bolognese sauce, adding a little pasta water if needed for a silky consistency, and serve immediately with freshly grated Parmesan cheese.
