Summer Fish Gratin with Courgette from the bakeVIA Mini Oven

Ingredients

  • 600 g white fish fillet (e.g. cod or tilapia), cut into pieces
  • 2 medium courgettes, thinly sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 250 ml heavy cream
  • 100 ml fish stock
  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 100 g grated Gruyère or mature cheese
  • 2 tablespoons fresh breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  1. Heat the olive oil in a frying pan over medium heat and sauté the onion and garlic for about 3 minutes until soft and translucent. Add the courgette slices and cook for a further 4 minutes until they begin to colour lightly; season with salt, pepper and thyme, then set aside.
  2. Melt the butter in the same pan over medium heat and stir in the flour until a smooth roux forms. Gradually add the fish stock and heavy cream, stirring continuously, and let the sauce simmer for 3 to 4 minutes until nicely thickened and creamy; season with salt and pepper.
  3. Spread half of the courgette mixture over the bottom of a greased baking dish that fits in the bakeVIA mini oven. Place the fish fillet pieces evenly on top, cover with the remaining courgette, and then pour the creamy sauce evenly over the contents of the dish.
  4. Preheat the bakeVIA mini oven to 190 degrees Celsius. Mix the grated cheese with the breadcrumbs and sprinkle this mixture evenly over the gratin, slide the dish into the bakeVIA mini oven and bake for 25 to 30 minutes until the top is golden brown and crispy and the fish is cooked through.
  5. Carefully remove the gratin from the bakeVIA mini oven and allow it to rest for 5 minutes so that the sauce firms up slightly. Garnish with freshly chopped parsley and serve immediately as a main course, optionally with crusty baguette or a fresh green salad.
